Vegetarian Tortilla Soup

gluten free, sugar free, yeast free

Ingredients:

1 ½ cups uncooked quinoa

1 garlic clove minced

2- 14 oz. cans vegetable broth

2- 14 oz. cans chopped stewed tomatoes

1 cup salsa

1 cup finely chopped parsnips

1 16oz. can of black beans rinsed & drained

1 tablespoon cumin

1 tablespoon chili powder

1  15 oz. can traditional organic refried beans

Toppings:

Sour cream

Monterey Jack or cheddar cheese shredded

Tortilla chips

Toppings for Yeast Free Diet:

shredded goat cheese

plain greek yogurt (Fage)

Preparation:
Combine all ingredients in crock pot. Except: refried beans, shredded cheese, sour cream and tortilla chips.

Cook in crock pot for 4 hours on high or 8-10 hours on low. OR cook on stove.

Stir in blended traditional refried beans before serving soup.

Top soup bowls with cheese, sour cream and tortilla chips. For Yeast free diet use goat cheese and plain greek yogurt.
