Ingredients:
1 pound ground beef, browned
1/3 cup dried green split peas
1/3 cup dried lentils
1/3 cup Quinoa
1/2 cup dried black-eyed peas
3 1/2 cups organic beef broth
4 1/2 cups Water
1 Can (16 oz) whole peeled tomatoes, undrained
2 1/2 Cups veggies of your choice (celery, onion, zucchini, carrots)
2 teaspoons dried basil
1 1/2 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon chopped garlic
3 1/3 tablespoons Parmesan Cheese (optional)
Preparations:
Wash peas, lentils and drain. In a large pot, mix peas, lentils, quinoa with beef broth and water. Bring to a boil, cover and reduce heat, simmer for 30 minutes. Add remaining ingredients and simmer another hour or until peas are tender. Optional: serve with parmesan cheese.
