Cheesecake

sugar free, gluten free, yeast free

Ingredients:

2 cups  almonds

3 tablespoons powdered stevia

1/3 cup  butter or margarine, melted

4 pkg.  (8 oz. each)  cream cheese, softened

1/2 cup xylitol

1/2 cup powdered stevia

1 teaspoon  vanilla

4 eggs

Preparation: 

Preheat oven to 325 degrees.

In a food processor, grind up the almonds then add 3 tablespoons of powdered stevia and melted butter; press onto bottom of 2 – 9-inch pie pans.

Beat cream cheese, xylitol stevia and vanilla with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.

Bake 55 minutes or until center is almost set. Cool and then refrigerate 4 hours before serving.  Top with fresh berries.
