Curry Quinoa

gluten free, sugar free, yeast free

Ingredients:

1 cup uncooked quinoa

1 teaspoon curry powder

1/4 cup shredded unsweetened coconut

2 cups chicken broth

Preparation:

In a pot, boil the chicken broth, add remaining ingredients, bring to a boil again, simmer for 30-40 minutes.
