Pepper Steak and Quinoa

gluten free, sugar free, yeast free

Ingredients:

1 1/4 pound beef boneless round, Tip or Chuck Steak (3/4 inch thick)
1 cup beef broth
1 can salsa-style diced tomatoes
2 teaspoons Ground Cumin
1/2 teaspoon Salt
2 cloves garlic, finely chopped
1 cup bell peppers chopped

1 cup onions, chopped
1 cup uncooked quinoa (or rice)

Preparation:

Cut steak into 4 serviing pieces.  Place beef in 3-4 quart slow cooker.  In medium bowl, mix broth, tomatoes, cumin, salt and garlic, then pour over beef. Cover and cook on low for 5 hours.

Cut up bell peppers and onions, mix with rice or quinoa and put in slow cooker.  Increase heat to high for 2 hours or until quinoa or rice is tender.
