gluten free, sugar free, yeast free
Ingredients:
1 cup powdered stevia
1 cup xylitol
1/2 cup unsweetened almond milk
1 stick margarine (or dairy-free margarine)
3 tablespoons cocoa powder
1 teaspoon salt
3 cups quick oats
1 teaspoon vanilla extract
1/2 toasted sunflower seeds or broken walnuts
1 cup shredded coconut
Preparation:
Put pieces of waxed paper on counter.
Place powdered stevia, xylitol, unsweetened almond milk, butter, cocoa powder and salt in a large saucepan and bring to a boil, stirring occasionally. Remove from heat; stir in oats, vanilla, sunflower seeds or walnuts, and coconut (optional). Drop batter from a teaspoon onto wax paper and let cool. Store in a covered container. Yields 48 cookies.
