gluten free, sugar free, yeast free
Ingredients:
2 boneless chicken breast halves
1/2 cup hummus
2 tablespoons celery, finely diced
1 tablespoons green onions, finely chopped
1 tablespoons red bell pepper, finely chopped
¼ teaspoon salt
Freshly ground pepper
1 cup cubed (1/2 inch) grilled chicken breast (about 2 boneless breast halves)
1 tablespoon water
1 teaspoon fresh parsley, finely chopped for garnish
Salad greens, for serving
Preparation:
In a large bowl, stir hummus, celery, green onions, bell pepper, salt and a sprinkling of pepper. Grill chicken,cube into 1/2 inch pieces.
Add chicken and water to hummus mixture and stir until mixed thoroughly.
Sprinkle with parsley. Serve on top of your favorite salad greens. Makes 4 servings.
