Garlic Spread

gluten free, sugar free, yeast free

Ingredients:

1 garlic bulb

1/2 – 2/3 cup vegetable oil (not olive oil)

3 tablespoons sugar free mayonnaise

3 tablespoons fresh squeezed lemon juice

salt & pepper to taste

Preparation:

In a vita mixer or blender, place garlic bulb, salt and lemon juice.  Start blender, blend well then add a little oil at a time to the garlic until it runs out.  Add the mayonnaise in blender and mix again.  If it tastes like too much mayo add more oil and blend. Add salt and pepper to taste blend and serve immediately or put in container and refrigerate.
