Ingredients:
1 cup walnut halves and pieces
5 pitted dates, coarsely chopped
1 teaspoon grape seed oil
1 ½ teaspoon vanilla extract
1 teaspoon cinnamon
Pinch of salt
Preparation:
Preheat oven to 350 degrees. Place walnuts and dates in food processor and pulse until mixture coarsely ground. Pulse in oil, cinnamon, vanilla and salt. Continue to pulse until it clumps.
Line a baking sheet with parchment paper. Scoop dough, 1 tablespoon at a time, onto baking sheet, forming balls with your hands; flatten slightly. Bake for 6-8 minutes until firm. Cool on baking sheet.
Makes 10 cookies
