Chocolate Truffles

gluten free, dairy free

Ingredients:

1 cup raw cocao powder

1 cup cashews

1/2 cup agave syrup

Water to mix

shredded coconut

Preparation:

In a food processor, blend cashews into a powder, add water to mix.  Add agave syrup to cashews and process, then mix with cocoa powder, (you may have to add a little more water to mix) refrigerate for a few hours or overnight for better results. Roll 1 tablespoon of mix into a ball then roll in shredded coconut

Optional toppings:  use chocolate nibs, cocoa powder, dehydrated cherries, or ginger, or whatever you like instead of the shredded coconut for a topping.
