Chocolate Ice Cream

gluten free, sugar free, yeast free, dairy free

Ingredients:
1 can unsweetened coconut Milk (16 oz)
2 eggs
1/2 teaspoon xanthan Gum
1/2 – 3/4 cup xylitol
2 cups other milk (unsweetened almond or unsweetened coconut milk or plain yogurt)
1 tablespoon vanilla extract
2 tablespoons cocoa powder
stevia drops to taste

Preparation:
Blend all ingredients in Vita mixer or blender.  Start ice cream maker first and then pour in mixture slowly. Let it spin for 20 minutes or until thickened.
