Cheesecake Pancakes

gluten free, sugar free, dairy free

Ingredients:

2 cup gluten free flour mix

2 cups unsweetened almond milk

½ teaspoon sea salt

1 ½ teaspoon baking soda

¼ teaspoon xanthan Gum

1 tablespoon organic vanilla

1 tablespoon lemon extract

¼ cup xylitol  or  40 drops of Nu Stevia liquid sweetener

Preparation:

Use hand mixer to mix all ingredients above together. Pre heat griddle to 350 degrees and melt coconut oil on it then scoop ¼ cup portions onto griddle.

Makes 10-15 pancakes

Spread with cream cheese and top with berries.  We also use agave syrup in place of maple syrup.

*We usually double the recipe for our large family and freeze leftovers for later.
