Bean Salad

gluten free, sugar free, yeast free

Ingredients:

1 -15 ounce can black beans

1 -15 ounce can garbanzo beans

1/2 cup onions chopped

1/3 cup olive oil

1 cup fresh diced tomatoes

1 tablespoon lemon juice or  1/3 cup white vinegar

2 teaspoons ground cumin

2 teaspoons ground coriander

1/2 teaspoon salt

Preparation:

Drain beans, chop onions and tomatoes, place all ingredients in a bowl, mix and serve.  I double the recipe for our big family.
