gluten free, sugar free, yeast free
Ingredients:
1 cup coarsely chopped pecans
1/2 cup xylitol
4 tablespoons butter
2 cans coconut milk
2 tablespoons agave syrup
2 tablespoons vanilla extract
2 eggs
1/3 teaspoon xanthan gum
60 drops liquid stevia
Preparation:
In a 8 inch skillet, melt butter add chopped pecans, and xylitol. Heat mixture stirring constantly, for 6 to 8 minutes or until xylitol melts and turns a rich brown color. In a high speed blender combine coconut milk, agave syrup, vanilla, eggs, xanthan gum and 60 drops liquid stevia. Blend on high speed for 1-2 minutes. Add nut mixture blend thoroughly if you want smooth ice cream otherwise blend on low speed just enough to mix in sugar and nuts. Start your ice cream maker, (we bought ours at Best Buy) first and then pour mixture in slowly. Let it spin for 20 minutes or until ice cream is thick. Scoop and enjoy!
