Mozzarella Caprese Salad

gluten free, sugar free

Ingredients:

1 pound fresh milk mozzarella cheese, cut 1/4-inch thick slices

1 pound fresh Roma tomatoes, quartered

salt to taste

pepper to taste

1/4 cup olive oil

1 tablespoon fresh basil, chopped

8 fresh basil leaves

Preparation:                                                                                                                                                                                                   Place sliced fresh mozzarella cheese in two rows down the middle of of large serving platter.  On each side of the mozzarella cheese place quartered Roma tomatoes.  Sprinkle salt and pepper over the tomatoes and mozzarella cheese.  Pour olive oil evenly over the tomatoes and mozzarella cheese.  Top with chopped Basil and garnish with basil leaves.  Serve at room temperature.
