Italian Sausage Lentil Soup

sugar free, yeast free

Ingredients:

3 quarts beef stock

1 pound dried lentils, rinsed

1 large carrot, finely diced

1 yellow onion, finely diced

1/2 cup finely diced celery

1 pound Italian sausage, cooked & chopped

3 tablespoons sage

1 -15 ounce can diced tomatoes

3 tablespoons lemon juice

salt and pepper to taste

Preparation:

In large pot, add olive oil, carrots, onion, celery, salt, pepper and sage sauté for 5 minutes.  Add beef stock, canned tomatoes, lemon juice, Italian sausage and lentils stir and bring to a boil.  Turn heat down to medium and cook for approximately 1 hour or until soup thickens.
