Tortillas – Soft Taco Shells

gluten free, sugar free

Ingredients:

1 1/2 cups gluten free flour mixture (Namaste Sugar Free Perfect Flour Blend is our favorite)

1 1/2 cups plain greek yogurt

3/4 cup water

7 eggs or 1 carton of “Real Eggs” egg substitute

1 teaspoon salt

1/3 teaspoon xanthan gum

Preparation:

Place all ingredients in a blender and mix well.  Pour 1/3 cup portions in an well oiled griddle at 350 degrees.
