Ingredients:
4 zucchini (green, yellow or mix)
1 cup chopped onion
1 tablespoon olive oil
2 tablespoon mint (dry or fresh)
Pepper to taste
Directions:
Optional peel zucchini. Cut the zucchini into 1 inch cubes. Sauté the onions in olive oil until they are golden brown. Add the zucchini, mint and the pepper. Cook over medium heat for 20 minutes. Sprinkle with water to prevent sticking if necessary. Yields 4 servings
