Spinach Pancakes

gluten free, sugar free, yeast free

Ingredients:

6 eggs

1 cup organic spinach (fresh is best)

1/4 teaspoon salt

Preparation:

Combine all ingredients in high speed blender.  Grease griddle or frying pan with olive oil.  Pour slowly to form pancakes.  Cook on both sides.
