Pumpkin Fritters

gluten free, sugar free, yeast free

Ingredients:

3 1/2 cups unsweetened almond milk

4 cups canned or cooked mashed pumpkin

4 eggs

2 cups gluten free flour mixture

1 teaspoon baking powder

4 tablespoons of stevia

pinch of salt

olive oil

Optional:  cinnamon stevia powder mix

Preparation:

In a bowl, combine all ingredients, making a soft batter and fry spoonfuls in shallow olive oil till both sides are lightly browned.  Drain on paper towel and serve warm with cinnamon and stevia powder.

If mixing your own gluten free flour add 1 tsp xanthin gum
