Falafel

gluten free, sugar free, yeast free

Ingredients:

2 – 16 oz cans of organic garbanzo beans

1 medium onion, chopped

2 cloves of garlic, chopped

3 tablespoons parsley flakes

1 tablespoon coriander

1 tablespoon cumin

2 tablespoon gluten free flour mixture

salt

pepper

 

Preparation:

Preheat oven to 375 degrees.  Drain garbanzo beans.  In food processor, add garbanzo beans, onion, garlic cloves, parsley flakes, coriander, cumin, gluten-free flour mixture, salt and pepper (to taste) or you can also mash garbanzo beans and mix all ingredients together in a bowl.  Take muffin pan, spray each tin with olive oil, place two heaping tablespoons of mixture in each muffin tin.  Place in preheated oven cook until crisp approximately 15 minutes.  Makes over dozen Falafel patties.
