gluten free, sugar free, yeast free, 

Ingredients:

1 cup water

1/2 cup organic Quinoa, cooked

1 cup fresh parsley leaves, minced

1/2 cup fresh mint leaves, minced

1/2 cup finely chopped yellow onion

3 fresh tomatoes, diced

2 fresh cucumbers, seeded and diced

3 tablespoons olive oil

3 tablespoons organic lemon juice, or to taste

1 teaspoons salt

Preparation:

Wash and cut stems off of fresh parsley. Place parsley, mint leaves, chopped onions, diced tomatoes, diced cucumbers into a food processor. Process until coarsely ground. Place processed mixture and quinoa into a large mixing bowl. Combine the oil, lemon juice, and salt in a separate bowl. Add to Quinoa mixture and mix well. Chill.
