Indian Style Lentils

gluten free, sugar free, yeast free

Ingredients:

1 cup lentils

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon turmeric

1/2 teaspoon dry mustard

1/2 teaspoon ginger

Pinch of cayenne pepper

cooked quinoa

Preparation:

Start cooking quinoa (follow package directions) then rinse the lentils, put them in a quart of water, bring to boil then simmer for approximately 45 minutes, till done.  In small saucepan over medium heat add olive oil and spices this should only take a minute. Take about 1/2 cup of the liquid from the cooked lentils and pour it into the spices in the saucepan.  Stir, till the spices bubble, dissolve, and mix well into the liquid. Now, pour spice mixture back into the lentils and stir.  Simmer for a couple of minutes to blend the flavors.  Serve the lentils over quinoa.

Important:  Don’t skip cooking the spices in the oil.
