Chicken and Sweet Peas

gluten free, sugar free, yeast free

Ingredients:

8 oz. boneless, skinless chicken breasts

1 tablespoon olive oil

2 cloves of garlic, minced

1/2 cup fresh cilantro, chopped

1 cup of organic tomato paste

4 cups filtered water

1 lb  frozen sweet peas

Pepper to taste

Preparation:

In a skillet, over low heat, sauté chicken breasts in olive oil.  Remove from skillet and cool. Place chicken breasts, pepper, cloves of garlic, cilantro in a food processor. Process until chicken is coarsely ground. If no food processor, chop chicken into small fine pieces mix with cilantro and minced garlic. Put mixture back into skillet, add water, tomato paste and bring to boil. Add the peas and cook them over medium heat for 20 minutes. Yields 4 servings
