Shepherds Pie

gluten free, sugar free

Ingredients:

1 large Jicama (cook according to Jicama Mashed potato recipe)

1 teaspoon salt

1 tablespoon olive oil

1 – 1 1/2 cup frozen peas, cooked

1 can corn

1 onion diced

1 pound of lean ground beef or ground turkey

2 gloves of garlic, minced

1/2 teaspoon of dried thyme

2 cups shredded cheddar cheese (optional)

Preparation:

In a pot, cook beef or turkey with onion, garlic, thyme. At the same time cook Jicama (according to Jicama Mashed potato recipe below).

Preheat oven to 375.  In a greased glass rectangular pan, add layers, meat, peas, corn, top with Jicama mashed potatoes.  Bake for 30-40 minutes.  Optional: top with cheddar cheese put back in oven until cheese is melted.
