Jicama Mashed Potatoes

Gluten free, sugar free

Ingredients:

1 large Jicama (Mexican Yam)

2 big cloves of garlic, minced

1 stick of butter

1/2 package of cream cheese

2 tablespoons of unsweetened almond milk

salt to taste

Preparation:

Wash and peel Jicama.  Cut into 1/2 inch cubes. Bring pot of water to a boil.  Add Jicama cubes boil for 25 minutes or until soft.  Drain and cool.  Add Jicama, minced garlic, butter, cream cheese, salt to a food processor or vita mixer.  Blend well.  Add milk or unsweetened almond milk if too thick.
