Italian Meatballs

gluten free, sugar free, yeast free

Ingredients:

1 pound ground beef

1 pound gluten free ground Italian sausage

2/3 cup unsweetened almond milk

3 slices of gluten free bread (we like Rudy’s Original)

1/4 cup grated parmesan cheese

2 eggs

2 teaspoons salt

1 tablespoon fresh or dried parsley flakes

2 tablespoons black pepper

1 teaspoon dried oregano

2-3 garlic cloves, minced

1 cup of gluten free flour mix for dusting

1/3 cup olive oil

Preparation:

Tear the bread slices into little pieces, heat the unsweetened almond milk in a small pot until steamy.  Turn off heat and soak bread pieces in unsweetened almond milk until partially dissolves. Mash it until it becomes like a paste.  Let it cool.

In a large bowl combine the beef, ground Italian sausage, grated parmesan cheese, eggs, salt, parsley flakes, black pepper, oregano, garlic cloves, and the bread almond milk mixture.  Mix it well with your hands.

Preheat oven to 375F.  Form the meatballs. Approximately 2-3 inches across.  Roll each meatball in flour to give it a good coating.  Set each one on a greased baking sheet as you work.  When you’re all done forming the meatballs, place them in the oven for 20-30 minutes.
